However I have a pet peeve of not hot dinners. In general I don't really like food that isn't warm, so sandwiches aren't usually my cup of tea. Also, cheese is pretty darn good, but it becomes pretty darn SPECTACULAR when melted. So I present to you: Molly's super simple hot roast beef sandwiches.
First I heated up some olive oil in a frying pan. Then I cut a few skinny slices of baguette and tossed them in the pan.
Skinny is key because you're making a sandwich and there's few things I hate more than a sandwich/burger that you can't fit in your mouth and have to awkwardly eat from the top and/or bottom.
Then I sliced up some tasty, tasty brie (I like to cut the rinds off, but I guess that's a personal choice).
After flipping each piece of bread so the other side can get nice and toasty too, I put a little piece of brie on each piece. Then I covered it up with a lid to help the cheese melt faster and waited (very) impatiently.
See? Cheesy melt-y goodness. Plus its some pretty bangin' roast beef. I was only going to get a quarter pound but the guy at the deli convinced me to bump it up to a half and he was SO right.
Looks like a good dinner to me!
Moral of the story, even really simple meals can become so much better with some heat. Granted, I had an extra pan to clean, but for melted brie, totally worth it.
