Dang Quesadillas

One of my least favorite things growing up, and to this day, is leftovers night. It's not that plenty of meals don't taste perfectly fine the second time around, but the excitement of a fresh meal was always so much better that something that had been sitting in the fridge for 2 to 7 days give or take. (Note: this does not include to restaurant leftovers which are AWESOME and let you relive a fun night out).

However, leftovers can be quite tasty when you recreate them into something new. It doesn't have to be drastic, just a different meal from your original. Like the transition from taco to quesadilla. Still Mexican, but a little different (read: more melted cheese). Yesterday evening I came across a tuberware of leftover ground beef from the tacos my roommate made for the house last week: PERFECT! There were a few soft taco shells left too and we always have plenty of cheese in the house, so I had the makings of some yummy quesadilla goodness on my hands.

If you can't tell, there's a solid handfull of cheese on each shell. Completely necessary.

Since this was an eat-things-that-are-already-in-the-fridge kind of night, I went pretty traditional with dipping sauces, just salsa and sour cream. (Stay tuned for me and my mom's summer salsa. Nothin but veggies, nothin' but delicious.)

Shockingly we didn't have any tomatoes which are usually a quesadilla staple for me (I like to have something healthy thrown in there) but we did have black olives and iceberg so I threw those on top.

Ta-da! A little hard to flatten out with so much filling, but I always have the same problems with tacos so nothing's changed there.
